"I own an organic meal assembly business in Encinitas that specializes in gluten free meals and baked goods. We have been open for about 15 months now and have offered gluten free alternatives for every meal since the time we opened! I personally am gluten intolerant so I know how much easier having these meals readily available can make my life. Our set-up is basically a facility where people can come and assemble their own meals with already prepped ingredients, or have us put the meals together for them, then they take them home and freeze or just cook fresh that week. We offer at least 12 different meal options every month and we strive to make a gluten free option for every single one (including making gluten free ravioli, pizza crusts, pot pie crusts, etc)! We also offer a variety of gluten free baked good including banana bread, granola, brownies, cookies, etc that are delicious and sell out everytime!"
