The following is in response to a comment that was posted here previously. That comment has since been removed because of the misleading information given. The following gives valuable insight into the PF Chang kitchen/serving procedures:

"I used to work at a PF Chang's (in Broomfield, CO), and I have been diagnosed since I was 8 years old. . . . NO beef (or pork) dishes can be made gluten-free, due to how Chang's marinades the meat overnight. Kung Pao Chicken is out too, because of how it is prepared  (the stock velveting).

Also, while some restaurants are good about GF, some are not, and when I was working there, I had to educate a lot of other servers and kitchen staff about celiac sprue. ALWAYS ensure that the server understands what you are asking for, and ALWAYS make sure to request that fresh oil be used in a clean wok. I find it best to ask for the head chef if the server seems the least bit confused, just as a precaution.  Believe me, I loved working there, and that they actually have a full-fledged GF menu is great, but we must still use caution. If anyone has any concerns please let me know, or contact your local PF Changs for clarity."

"FYI sauces on tables at PF Chang are Gluten Free except of course the regular soy sauce. Every time I dined at PF Changs the servers would give me different answers about the gluten free status of the sauces on the table. So I decided to e-mail the company. Here is their response.

On 8/10/2007 6:31 PM, P.F. Chang's China Bistro wrote:

"The chili paste and hot mustard served at the table are gluten free, as well as the chili oil and white vinegar. The only modification would be the soy sauce. Upon notifying the server of your gluten free status, they should bring you a ramekin of our gluten free soy sauce(tamari). We do train our servers on this procedure. If this is not happening, please let us know so that we can remedy the situation. It is our desire to make sure your dining experience is not only memorable, but safe as well. I apologize for any confusion or discomfort we may have caused you. I hope this helps to clarify things. Please feel free to contact me with any other questions or comments. Have a great day. "The ice tea at P.F. Chang is gluten free. They get their tea from China Mist. I contacted them and they said their ice tea is gluten free." Unknown poster to the listserv, 6/05.

"They have a new 'Flourless Chocolate Dome' dessert that is GF and out of the this world! 7/06 to Listerv.

"I couldn't figure out why I kept getting reactions at Chang's, even with their gluten free menus. After an extensive conversation with the manager, I found out that they ROUTINELY re-use the wok oil-from previously made items. He said the oil is heated so hot, it kills all bacteria. I explained that it does not kill gluten. He told the chef to use NEW wok oil to cook all my items. You must do the same, because they don't use new oil on gluten free items!! The following was shared to the Listserv by Katie Berry in 4/08

"After reading about the problems at PF Changs, I emailed the company and Michael Katzman got back to me promptly! I am sure that there are individual restaurants that may have problems, but it sounds like this restaurant as a whole is VERY dedicated to serving safe gluten free food. I hope this helps!"

Dear Katie,
I am so sorry to hear that the Celiac Community is disappointed in our efforts to provide a Gluten Free menu. One thing we have prided ourselves on is a having a constant pulse on what`s happening in our community culinary wise and being able to bring a Gluten Free menu to those who need it. I`m sorry if we have failed you in that area. We take our Gluten Free menu very seriously and this is the first complaint I have heard about this since I took over this market 7 months ago. I encourage anyone who has gotten ill or feel we have let them down to e-mail me directly or through our website. Just last week I was in Palo Alto and reviewed their techniques and was impressed with their Gluten Free cooking process. They keep all sauces and utensils completely separate from any other part of the kitchen and everything in that station is safe, sanitary and at the proper temperature.

Now, because no one is perfect, I have even made sure that our operations side will now immediately get a manager involved every time there is a Gluten Free request. Upon firing the food, the manager will communicate this to the chef and the manager will now personally run out the food. To be honest with you Katie, we have heard nothing but compliments recently regarding our Gluten Free menu so I am disheartened that you feel this way and would love the opportunity to regain your trust. I would also love to give anyone who is concerned a tour of our kitchen and procedures. We are very proud of how we operate and leave it open to any guest to review. Once again please accept my most sincerest of apologies and let me know what else I can do to get back on your most trusted list. Katie, thanks for your gracious response. I assure you and the members of the Celiac Community that the Gluten Free menus is our number one priority and it is extremely important to us that we execute this well. Although I wish I could guarantee that this kind of thing will never, ever happen, I cannot. What I can guarantee id that our attention to the menu, procedures, and the training and execution of the menu will be second to none. We will be diligent in our follow through to all the procedures described herein and always pay the utmost attention to this matter. I personally would feel comfortable inviting my first cousin David who has a Gluten intolerance to dine with us, without reservations. I hope this makes you feel better about us and like I said in my original e-mail. Anyone is invited to tour and see how we operate., Thank you again for your patience and understanding and I look forward to feeding the entire Celiac Community real soon.
